Cut red onion into very thin slices.
Cut cherry tomatoes into small pieces.
Grease a baking dish with coconut oil.

Season with orange and lemon juice.
Add the onion and tomato.
Season with mustard seed, basil, salt and pepper.
Bake for at 180º for 45min.
